Pacific Oysters (Japanese Miyagi oyster (Crassostrea gigas))
Originally native to the Pacific coast of Japan, the Pacific Oyster is bred and sold to us growers as "SPAT" ready to be grown and fattened for the table

Spat the day we recieve it
Purchases of up to 3 or 4 million spat at a time are not unheard off. The spat is shipped to us overnight and then it’s a mad rush to get these baby’s into spat trays and out in the water as soon as possible, Depending on the conditions it can take up to 6 months before the spat has grown enough to be put into larger pillow baskets
We still farm our oysters the same way we always have, in pillow style baskets on racks or lines, People have tried all different ways of growing their oysters, some with success, some ended in tears, we have a saying "If it aint broke, don’t fix it"

Once they have reached BISTRO size they are hand sorted into their different growing speed sizes, this can happen four or five times and take 2 or 3 years, or even longer before they are of a saleable size, Once the oysters have reached this size we still have to sort them once again to make sure they are all of a regular shape and size, We then open a few randomly selected oysters just to make sure they are of the highest standards

Here we look at the size of the meat, colour and fat content, We are after the meat to fill the shell and bulge, not lay flat in the shell, a nice overall white colour and plenty of fat, If you put a nice juicy fat one in your mouth and eat it, it will leave a hint of fat in your mouth for a minute or so afterwards, If we have consistent colour, size and fat content its then time to count and bag them ready for delivery.
The Pacific Oyster will stay "ALIVE" for up to 4 or 5 days if treated correctly, Refrigerated at below 5deg and not bumped or knocked around, We count them into the desired amounts and put them into hessian bags
They are then loaded onto a pallet and shipped to the cool rooms to await the arrival of the afternoons delivery truck to be transported around Australia or exported overseas
